Black Rice & Veggie Bowl with Sweet Lemon Tahini

Whats better than a HUGE bowl of rice & veggies?! NOTHING! Just kidding..theres a bunch of other delicious recipes that are just as good! But I gotta say, I am pretty obsessed with rice. Dont listen to people who say rice has too much starch because did you know that

So I came up with this awesome rice bowl recipe that is filled with yummy spices and has a hint of sweetness to it which gives it a nice yummy KICK!


1 1/2 cup Purple or black sticky rice

1/2 TBSP coconut sugar

1 TBSP liquid aminos

1/2 cup diced red onion

1/4 cup diced carrots

1/2 cup kale

1/2 cup chopped red cabbage

1/2 tsp chopped garlic

1 tsp cumin

2 small yellow potatoes (cut into wedges)

1 tsp oregano

1 tsp fresh lemon juice

Parsley (garnish)

Lemon Tahini Sauce

4 TBSP tahini

1 tsp fresh lemon juice

1 1/2 TBSP maple syrup

Preheat your oven to 400 degrees. Spread your potatos evenly on a baking sheet and squeeze 1 tsp of fresh lemon juice over the potatoes & sprinkle on the oregano. Place in oven and cook for 25 min. or until nice and tender. While the potatoes are cooking, start by cooking the rice in either a rice cooker or in a medium sauce pan on a stove. While the rice is cooking, sauté the veggies over medium heat. Start by cooking your chopped garlic and onion until onions are fragrant and transparent, then stir in the red cabbage and carrots. Cook for 5 min. Then stir in the kale until it starts to shrink and wilt. Add in the cumin and set aside your veggies. Once the rice is cooked, stir in the coconut sugar and liquid aminos.

In a small mixing bowl, mix together the Lemon Tahini Sauce ingredients until smooth, if too thick then add a little water. Add the rice to a bowl of your choice then add in the veggies and potatoes along the side. Drizzle on your tahini sauce and garnish with a little parsley. I also added half of an avocado for extra yumminess!!

  1. This was amazing, I added a few,more veggies, riced cauliflower, red bell pepper and sweet potatoes instead. Yummy!!!
