Buttery Almond-Orange Shortbread Cookies

Sometimes I have a sweet tooth and want to make cookies, but don’t have the energy to do so. However, these cookies can be made ahead of time. Just pop the prepared dough in the freezer, take them out when you need them, cut into slices, and pop them in the oven. THAT easy!

These cookies are ultra-buttery, crunchy, and slightly crumbly. Just how a traditional shortbread cookie is supposed to be! With delicious citrus notes from the orange zest and a nutty flavor from the sliced almonds & extract.

Lemon Blueberry Scones

I am so excited to post this recipe because it is definitely one of my favorites! 

The texture is absolutely perfect, with a perfect amount of lemon taste and sweet blueberries which pairs perfectly with the raw sugar sprinkled on top!

S’mores Bars | A Healthier Version

You know what one of the best parts about summer is?? The food of course! One of my favorite being s’mores….yeah I know not the healthiest! Ever since going vegan it has been quite hard to find vegan marshmallows. They are out there, but only carried in specialty supermarkets and are a bit pricey. One step down from your traditional smores’ is a smores’ bar! 

I have seen these everywhere from pinterest and instagram to magazines.  These are an easier and more indulgent way to enjoy the delicious combination of graham cracker, chocolate, and toasted marshmallow.

Vegan Cranberry Pecan Pie w/ Candied Pecans

Coming back with another delicious fall recipe! I have never been a great pie maker so making my own recipe for one made me quite hesitant. To my surprise, it actually turned out really well on the first try. Of course I re-made it a couple times to get it just right.

This was actually a fun recipe for me to make, because it was originally a challenge between my fellow vegan friend, Trisha, and I. We decided to pick three ingredients that were “fall-inspired” and make a dish out of it. The ingredients were:
