Soft, fluffy, and perfectly moist banana bread studded with chunks of chocolate, walnuts and coconut shreds.
Preheat the oven to 350°F. Line a loaf pan with parchment paper.
In a large mixing bowl, mash ripe bananas until mostly smooth (a few clumps are ok). Add melted butter, maple syrup, egg, and vanilla. Whisk until combined.
Add flours, baking soda, cinnamon, and salt. Use a wooden spoon or spatula to combine until a smooth and pourable batter forms. Fold in walnuts, coconut flakes, and chocolate. Pour into prepared loaf pan. (Optional): Sprinkle over more chopped walnuts, coconut flakes, and chopped chocolate.
Bake for 32-35 minutes until top is golden brown and toothpick inserted comes with a few moist crumbs. Allow to cool for 10 minutes before slicing.
