These cinnamon rolls are soft, fluffy, and extremely simple to make. Party of two (or one)? I got you.
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking, powder, and salt. Add non-dairy milk and coconut oil. Use a wooden spoon to combine until a soft dough forms. Use your hands to form dough into a ball.
Transfer the ball to the parchment-lined baking sheet. Flatten and press into a 5x6" rectangle that's a few mm thick. Brush the surface with 1 tsp melted coconut oil. Sprinkle over the sugar and cinnamon.
Tightly roll the dough into a log. Cut the log in half and place the two pieces swirl side up. Squish down the rolls a bit, so they're not too tall. Bake for 15 minutes until light golden brown.
While still warm, drizzle with a simple powdered sugar icing (powdered sugar + non-dairy milk until desired consistency).
