Chai-Spiced Apple Bars

A perfectly soft and chewy apple cinnamon bar that contains simply ingredients and is easy to make. Also, gluten-free, refined sugar-free, and of course vegan.

Ingredients

  • cup non-dairy milk
  • 1 tsp apple cider vinegar
  • cup creamy almond butter
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 ¼ cups almond flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp chai spice
  • 1 medium apple, thinly sliced

Instructions

  1. Preheat the oven to 350 degrees. Line an 8x8 baking dish with parchment paper.

  2. Measure out non-dairy milk in a liquid measuring cup. Whisk in apple cider vinegar and let sit for 5 min. To a large mixing bowl, combine almond butter, maple syrup, and vanilla. Whisk until smooth. Add milk mixture and the rest of the ingredients. Stir with a wooden spoon or spatula until a thick, smooth batter forms (it should be a mix between a very thick batter and soft dough).

  3. Press batter into the preparing baking dish, smoothing over the top. I find that using my hands is best for this step. Press sliced apples over the top. Bake for 30-35 min. until toothpick inserted comes out clean. Let cool for 10 min. before serving
