Easy Vegan Peach Crumble

Sweet and syrupy stewed peaches topped with a buttery, soft, and crunchy crumble. This vegan peach crumble is very simple and quick to make.

Ingredients

Peaches

  • 4 ripe medium peaches, sliced
  • ¼ cup coconut sugar
  • ¼ cup cane sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt

Crumble Topping

  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • 2 tbsp coconut sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup melted vegan butter
  • 4-5 tbsp non-dairy milk

Instructions

  1. Preheat the oven to 350 degrees. Line an 8x10 baking dish with parchment paper.

  2. To a large mixing bowl, add sliced peaches, sugars, cinnamon, nutmeg, and salt. Use your hands or a wooden spoon to carefully toss peaches to coat. Spread in an even layer on the bottom of the baking dish.

  3. To a separate large mixing bowl, combine flour, oats, coconut sugar, baking powder, salt, and melted vegan butter. Use a wooden spoon or spatula to combine. Add in non-dairy milk 1 tbsp at a time until mixture comes together and forms a soft dough. You should be able to press the dough together with your hands, but it is still slightly crumbly. Sprinkle crumble over the peaches. Bake for 35 minutes until top is golden brown and peaches are bubbling.

  4. Allow crumble to cool 5 minutes before serving. Serve with vanilla ice cream and/or whipped cream.
