Peanut Butter Oatmeal Granola Bars

Chewy, sweet, and simple peanut butter oatmeal granola bars studded with chocolate chips and pumpkin seeds.

  • ½ cup creamy peanut butter
  • cup maple syrup
  • 2 tbsp coconut oil
  • 2 cups rolled oats
  • 1 cup chopped almonds
  • ½ cup pumpkin seeds
  • ½ tsp ground cinnamon
  • ¼ tsp sea salt
  • ¼ cup dark chocolate chips


  1. In a medium saucepan, combine peanut butter, maple syrup, and coconut oil. Whisk over medium heat until creamy and coconut oil is melted. Take off the heat. Add oats, almonds, pumpkin seeds, cinnamon, and sea salt. Use a wooden spoon or spatula to fold and combine until it resembles a granola mixture.

  2. Spread mixture into an 8x10 parchment-lined baking dish. Sprinkle over dark chocolate chips and press into the dough. Refrigerate for 1 hour to set. Cut into 8 bars. Store in an airtight container in the fridge.
