Extra fluffy and soft pumpkin spice pancakes to warm you up this fall season.
Combine flaxseed meal and water in a small bowl. Set aside for 5 minutes to thicken.
In a large mixing bowl, whisk together flax egg, milk, pumpkin puree, and vanilla extract.
Add pancake mix and pumpkin spice. Whisk until smooth and creamy.
Heat a large skillet on medium. Pour ¼ cup batter into the pan and cook until edges become matte and a few bubbles form in the center. Flip, and cook until golden brown.
Serve pancakes with a pad of vegan butter, drizzle of maple syrup, and chopped walnuts. Serve with a couple breakfast patties (cooked according to package directions).
