  • 1 medium, ripe banana
  • cup melted coconut oil
  • ¼ cup maple syrup
  • 2 tbsp creamy almond butter or sub other nut butter
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup raisins
  • ¼ cup chopped pecans
  • ¼ tsp salt

  1. Preheat the oven to 350°F. Line a baking sheet with a silicone baking mat or parchment paper.

  2. In a large bowl, mash banana until smooth. Whisk in coconut oil, maple syrup, almond butter, and vanilla until creamy. Add oats, spices, raisins, pecans, and salt. Use a spatula or wooden spoon to combine until a wet mixture forms.

  3. Spread granola on to the prepared baking sheet. Bake for 22-25 minutes until golden brown. Allow cooling for 10 minutes before transferring to an airtight glass jar or ziploc.
