Chocolate Chip Walnut Zucchini Bread

Fluffy, moist, and dense zucchini bread embedded with gooey chunks of chocolate chips and crunchy walnuts. This zucchini bread is so delicious and extremely simple and easy to make.

  • ¾ cup non-dairy milk
  • 1 tsp apple cider vinegar
  • 1 medium ripe banana
  • 1 ½ cups all-purpose flour
  • ½ cup coconut sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 cup grated zucchini
  • ½ cup dark chocolate chips
  • ¼ cup chopped walnuts


  1. Preheat the oven to 350 degrees. Line a loaf pan with parchment paper.

  2. In a liquid measuring cup, measure non-dairy milk. Whisk in apple cider vinegar. Set aside for 5 minutes. Mash banana in a large mixing bowl. Whisk in milk mixture.

  3. In a separate mixing bowl, whisk together flour, coconut sugar, baking soda and powder, cinnamon, and salt. Add flour mixture to milk mixture. Use a wooden spoon or spatula to combine until a smooth, thick, and pourable batter forms. Fold in grated zucchini, chocolate chips and walnuts.

  4. Pour batter into prepared loaf pan. Bake for 40 minutes until top is golden brown and toothpick inserted comes out clean. Allow bread to cool for 5 minutes before slicing.
