Chocolate Chunk Almond Granola Bars

Chewy granola bars studded with rich dark chocolate chunks and crunchy bits of almonds. This recipe contains simple ingredients and is affordable, easy to make, and 100% plant-based.

Ingredients

  • ½ cup creamy peanut butter
  • cup maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 ½ cups rolled oats
  • ½ cup sliced almonds
  • ¼ cup pumpkin seeds (pepitas)
  • ½ tsp ground cinnamon
  • ¼ tsp sea salt
  • ¼ cup chopped dark chocolate (60-70%) or dark chocolate chips

Instructions

  1. Line an 8" square baking dish with parchment paper.

  2. In a medium saucepan, combine the peanut butter, maple syrup, and coconut oil. Whisk over medium heat until coconut oil has completely melted. Remove from the heat and whisk in vanilla extract.

  3. Add the oats, almonds, pumpkin seeds, cinfnamon, salt, and chocolate. Use a wooden spoon or spatula to combine until a sticky, granola-like mixture forms. Press granola bar mixture into prepared baking dish, making sure its evened out on top

  4. Refrigerate granola bars for at least 1 hour. Slice and enjoy! Store in an airtight container in the fridge for up to 1 week.
