Healthy, vegan, and simple chocolate chip walnut banana bread. Packed with a lot of deliciously sweet and chocolatey flavor.
Preheat the oven to 350 degrees. Line a loaf pan with parchment paper.
Combine milk and vinegar in a large bowl. Let set for 5 min. to slightly curdle. Whisk in mashed banana, coconut oil, maple syrup, vanilla, and coconut sugar until combined. Add flours, baking soda, spices, and salt. Stir until almost all the flour has incorporated into the batter. Fold in the chocolate chips until combined and no visible flour remains (make sure not to overmix!).
Pour batter into prepared loaf pan. Bake for 45-50 min. until a toothpick inserted comes out clean (no batter on the toothpick, chocolate is fine because that means it's gooey and delicious).
