Chocolate Banana Brownie Bread

What do you get when you cross banana bread with a brownie? The fudgiest and most dense double chocolate banana bread. Simply melt in your mouth goodness.

Ingredients

  • 2 tbsp (16g) flax seed meal
  • 4 tbsp (57g) water
  • 2 ripe bananas (¾ cup mashed or 161g)
  • cup (90g) maple syrup
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 cup (96g) almond flour
  • cup (36g) cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • cup (85g) roughly chopped, dark chocolate

Instructions

  1. Preheat the oven to 350 degrees. Line a loaf pan with parchment paper.

  2. Mix together flax seed meal and water in a small bowl. Set aside for 5 min. to thicken.

  3. In a large mixing bowl, mash ripe bananas until smooth. Whisk in flax egg, maple syrup, apple cider vinegar, and vanilla. Add in almond flour, cocoa powder, baking powder and soda, and salt. Stir until smooth. Fold in dark chocolate. Pour batter into loaf pan and smooth over with a spatula to evenly distribute. Bake for 50-55 min. or until toothpick inserted comes out mostly clean (it may be a bit wet, due to the chocolate chunks).

  4. Important! Let cool for 10 min. before slicing. It may seem a bit underdone, but that's what makes it ultra gooey and fudgy.
