  • 1 tbsp flax seed meal
  • 2 tbsp water
  • ¼ cup softened, coconut oil
  • ¼ cup creamy almond butter or sub other nut butter
  • ½ cup coconut sugar
  • 1 tsp vanilla extract
  • 2 tbsp non-dairy milk
  • 1 cup almond flour
  • ¼ cup coconut flour
  • ½ tsp baking soda
  • Pinch of flaky sea salt
  • ½ cup chopped, dark chocolate

Chai Spice Mix

  • 3 tsp cinnamon
  • 2 tsp ginger
  • 2 tsp cardamom
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 1 tsp cloves

Chai Spice Mix

  1. Combine all spices in a small jar. Seal and store at room temp.

  1. Preheat the oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper. To a small bowl, whisk together flax seed meal and water. Let sit for 5 min. to thicken.

  2. To a large mixing bowl or stand mixer, combine softened coconut oil, almond butter, and coconut sugar. Using a handheld mixer or stand mixer, cream ingredients together until smooth. Mix in flax egg, vanilla, and milk until combined. Add flours, baking soda, salt, and 2 tsp chai spice. Using a wooden spoon or spatula, stir until a smooth dough forms. Fold in chopped chocolate.

  3. Use a cookie scoop to scoop dough onto prepared baking sheet. Bake for 18 min. Let cool for 10 min. before serving.
