These healthier chocolate chip cookie ice cream sandwiches are made with a soft, chewy gluten-free chocolate chip cookie stuffed with creamy vanilla banana ice cream. The ultimate summer dessert.
Prepare one batch of chocolate chip cookies. Allow to completely cool before topping with ice cream.
In a high-powered blender, add frozen bananas, non-dairy milk, and vanilla extract. Blend until thick and creamy. You may need to scrape down the sides frequently. If you are having trouble blending the bananas, add more milk as needed. However, if it is too liquidy spread in a parchment-lined loaf pan and freeze for 20 minutes to set then scoop.
Spread a scoop of ice cream on one cooled cookie then press down with a second cookie. Place sandwiches on a plate or in a large container and freeze for 25 minutes to set.
Store sandwiches in an airtight container in the freezer.
