
Easy ground beef and veggie bowl in a flavor packed peanut sauce.
Whisk together all sauce ingredients until creamy. Set aside.
Heat 1 tbsp oil in a large skillet over medium-high heat. Brown beef, breaking it into small pieces, until it is browned and cooked through, about 5-6 minutes. Add to a bowl, leaving remaining fat in the skillet.
Heat skillet back up over medium-high and add in veggies. Cook until tender and transfer to a bowl.
Add remaining tbsp of oil to the skillet. Cook ginger and garlic for 1-2 minutes until fragrant, stirring constantly to prevent burning. Pour in sauce. Bring to a low boil then add in cooked beef and veggies. Stir well to fully coat.
Serve beef and veggies over cooked rice. Garnish with green onion and sesame seeds. Enjoy!
