Chewy Peanut Butter Oatmeal Cookies

Ingredients

  • ½ cup room temperature vegan butter
  • ¾ cup (150g) granulated sugar
  • ¼ cup (55g) packed light brown sugar
  • ½ cup (128g) creamy, natural peanut butter
  • 2 tbsp unsweetened, plain non-dairy milk
  • 2 tsp vanilla extract
  • 1 ½ cups (132g) old-fashioned rolled oats
  • ½ cup (64g) all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp salt
  • ¾ cup (61g) roughly chopped walnuts

Instructions

  1. Preheat the oven to 350°F. Line a large baking sheet with parchment paper.

  2. In a large mixing bowl, use a handheld mixer (or stand mixer with paddle attachment) to cream together the room temp. butter, sugars, and peanut butter until light and fluffy (about 3-4 minutes). On low speed, beat in the milk and vanilla extract.

  3. Add oats, flour, baking soda and powder, cinnamon, and salt. Combine on low speed until a soft dough forms. Fold in walnuts. 

  4. Use a ~1.5 tbsp cookie scoop to distribute dough onto baking sheet. Slightly press down each mound with the palm of your hand. Bake cookies for 11-12 minutes until light brown with crisp edges. Let cookies cool for 10 minutes before transferring to a wire cooling rack.
