
Crunchy and chewy chocolate chip pumpkin spice protein cereal bars.
Line an 8x8” baking dish with parchment paper.
In a large mixing bowl, combine cereal with protein powder.
In a small saucepan over medium-heat, melt together almond butter and honey. Remove from heat and whisk in vanilla.
Pour into the protein cereal mix and stir well to combine. Pour mixture into a lined baking dish and press down firmly to hold into place. Top with mini chocolate chips.
Refrigerate for at least 30 minutes to firm up. Cut into 8 even-sized bars. Store bars in an airtight container in the fridge for up to 1-1 ½ weeks.
