Coffee Cake Baked Oatmeal Cups

Ingredients

Oatmeal

  • 1 medium ripe banana
  • 1 ¾ cup + 2 tbsp non-dairy milk
  • 1 large egg
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 ½ cups old-fashioned rolled oats
  • 1 scoop (30g) vanilla protein powder
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

Pecan Oat Streusel

  • cup pecans
  • ¼ cup old-fashioned rolled oats
  • 2 tbsp melted butter
  • 2 tbsp brown sugar
  • 1 tbsp all-purpose flour
  • ½ tsp ground cinnamon

Instructions

  1. Preheat oven to 350℉. Line a 12-cup muffin tin with liners. 

  2. In a large mixing bowl, mash banana until smooth (a few lumps remaining is ok). Whisk in milk, egg, maple syrup, and vanilla. Add oats, protein powder, baking powder, cinnamon, nutmeg, and salt. Use a wooden spoon or spatula to combine until incorporated. Fill each muffin liner ¾ full. 

  3. To make the streusel, add pecans and oats to a high-speed blender or food processor. Blitz until a coarse meal is achieved. Add to a bowl along with the rest of the streusel ingredients. Stir until combined. Mixture should resemble wet sand. Sprinkle streusel over each muffin and gently press to the surface so it adheres. 

  4. Bake for 22-25 minutes until centers are just set. Cool in the pan for 15 minutes before removing.
