Dark Chocolate Pistachio Baked Oatmeal

Dubai chocolate meets baked oatmeal in this decadent dark chocolate pistachio baked oats.

Ingredients

  • ½ cup greek yogurt
  • 2 large eggs
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups milk
  • 2 ½ cups old-fashioned rolled oats
  • 2 scoops (50g) chocolate protein powder
  • 3 tbsp dutch-processed cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • cup chopped pistachios
  • 1-2 tbsp pistachio butter
  • (Optional): chocolate chips, for topping

Instructions

  1. Preheat oven to 350°F. Grease a 8x8" baking pan.

  2. In a large mixing bowl, whisk together yogurt, eggs, maple syrup, and vanilla until combined. Whisk in milk. Mix in oats, protein powder cocoa powder, baking powder, and salt. Fold in pistachios.

  3. Pour mixture into prepared baking pan. Drizzle over pistachio butter and sprinkle on chocolate chips. Bake for 30-35 minutes until set.

  4. (Optional): serve with another drizzle of pistachio butter and flaky sea salt.
