Easy Vegan French Toast

This Vegan French Toast has an extra fluffy interior and crisp golden brown exterior. It's perfectly balanced in sweetness and will simply melt-in-your-mouth.

Ingredients

  • 1 loaf sturdy & thick bread (I used sourdough), about 8-1" thick slices
  • 2 cups unsweetened, plain non-dairy milk
  • 1 ¼ cup chickpea flour
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 3-4 tbsp vegan butter

(Optional) Toppings

  • Powdered sugar
  • Maple syrup
  • Fresh berries (strawberries, blueberries, raspberries, etc)
  • Sliced banana
  • Sliced almonds

Instructions

Drying out the bread (if not using day-old bread)

  1. Cut the loaf into 1" thick slices. Lay the slices out on a wire cooling rack and leave on the counter for 8 hours or overnight. This step will dry out the bread which is what you want for crisp french toast.

Making the french toast

  1. In a large shallow mixing bowl, whisk together the chickpea flour, cinnamon, nutmeg, and salt until combined. Whisk in the milk, maple syrup, and vanilla until a smooth, slightly thick batter forms.

  2. Melt 2 tsp of butter in a large skillet over medium heat. Take a piece of bread and drench it on both sides in the french toast batter. Hold the bread over the bowl to let any excess drip off. Place bread on skillet and cook for 30-45 seconds on each side or until golden brown. Repeat with all remaining slices. Transfer each slice to a large plate when done cooking.

  3. Finish french toast with desired toppings, such as fresh fruit, almonds, powdered sugar, and maple syrup.
