Funfetti Cottage Cheese Donut Holes

Light and fluffy high protein donut holes elevated with lots of rainbow sprinkles.

Ingredients

  • ¾ cup 2% or 4% cottage cheese (I recommend Good Culture brand for best texture and taste)
  • 1 cup all-purpose flour (may need 1-2 tbsp additional flour)
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 large egg
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • 2 tbsp rainbow sprinkles

Icing

  • ½ cup powdered sugar
  • 2-3 tsp milk
  • ¼ tsp vanilla extract
  • ¼ cup rainbow sprinkles, for topping

Instructions

  1. Add cottage cheese to a food processor and process until just blended. The texture should be smooth with several small chunks remaining, similar to the texture of greek yogurt.

  2. In a large mixing bowl, whisk together the flour, baking powder, and salt. Add the blended cottage cheese, egg, maple syrup, and vanilla. Stir well with a spoon. Once it starts to come together, fold in sprinkles. If the dough feels too sticky, add 1-2 tbsp flour at a time.

  3. Take ~1 ½ tbsp dough at a time and carefully roll into balls. Flour hands, if needed.

  4. Preheat air fryer. Coat basket with non-stick cooking spray. Place balls in air fryer, trying not to overcrowd the basket. Spray with non-stick cooking spray. Air fry for 6-7 minutes at 350°F.

  5. Remove from air fryer and cool. While donuts are cooling, whisk together the ingredients for the icing.

  6. One donuts are completely cooled, dip them in the glaze, top with sprinkles, and let set for 10-15 minutes. Enjoy!
