Ingredients

  • ¼ cup egg whites
  • 3 tbsp melted coconut oil
  • 2 tbsp honey
  • 2 tbsp creamy unsalted peanut butter
  • 2 tsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • ¼ cup oat flour
  • ¼ cup chocolate protein powder
  • 1 tbsp dutch-processed cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • ⅓ cup chocolate chips + more for topping

Instructions

  1. In a mixing bowl, whisk together egg whites, coconut oil, honey, peanut butter, and vanilla until smooth. Add oats, oat flour, protein powder, cocoa powder, baking powder, and salt. Stir until a cohesive batter forms. Refrigerate for at least 15 minutes until batter thickens (this is important!).

  2. Preheat oven to 350℉. Line a large baking sheet with parchment paper.

  3. Use a ~1.5 tbsp cookie dough scoop to portion dough onto prepared baking sheet. Top with a few additional chocolate chips and slightly press each cookie dough mound down with the palm of your hand. Bake cookies for 12-14 minutes until set.

  4. Let cookies cool on baking sheet for 5 minutes before transferring to a wire cooling rack.
