High Protein Rotisserie Chicken Salad

High protein salad with shredded rotisserie chicken and fresh veggies tossed in a creamy dressing.

Ingredients

  • 4 cups shredded rotisserie chicken
  • cup cottage cheese
  • cup light mayo
  • ½ red onion, finely diced
  • 2 ribs celery, finely diced
  • 1 small apple, peeled and finely diced
  • 2 tbsp dijon mustard
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh parsley
  • Juice of ½ lemon
  • 1 tsp kosher salt
  • Freshly cracked black pepper, to taste

Instructions

  1. Combine all ingredients together in a large bowl until well combined. Adjust seasoning, to taste if desired (more salt, pepper, lemon juice, etc).

  2. Store rotisserie chicken salad in the fridge for up to 5 days. Serve on bread, in a wrap, on a bed of greens, or as a dip with crackers!
