Line a loaf pan with parchment paper.
In a small saucepan over low heat, melt together dark chocolate and coconut oil. Take off the heat and whisk in the peanut butter and vanilla extract until well combined. Fold in crisp rice cereal until the cereal is fully coated in the chocolate mixture.
Press mixture into an even layer into the prepared loaf pan. Sprinkle over flaky sea salt. Freeze for 15 minutes to set.
Use a sharp knife to cut into 8 evenly-sized bars. Store bars in the freezer in an airtight container for up to 1 month.
