Peanut Butter Swirl Banana Bread Brownies

Fudgy Peanut Butter Banana Bread Brownies - gluten-free and sweetened with banana and maple syrup.

Ingredients

  • 2 tbsp flaxseed meal
  • 2 ripe bananas (~¾ cup mashed)
  • cup (90g) maple syrup
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 cup (96g) almond flour
  • cup (36g) dutch-processed cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • cup (55g) chopped dark chocolate
  • cup (55g) peanut butter chips
  • 2 heaping tbsp creamy runny peanut butter

Instructions

  1. Preheat the oven to 350°F. Grease and line an 8×8" baking dish with parchment paper.

  2. Whisk together flaxseed meal and 4 tbsp of water in a small bowl. Set aside for 5 min. to thicken.

  3. In a large mixing bowl, mash ripe bananas until smooth. Whisk in flax egg, maple syrup, apple cider vinegar, and vanilla. Fold in almond flour, cocoa powder, baking powder and soda, and salt until smooth. Fold in dark chocolate and peanut butter chips.

  4. Pour batter into baking dish and smooth over with a spatula to evenly distribute. Dollop peanut butter over the batter then use a spoon to swirl into the batter. (Optional): Top with additional chocolate chunks and peanut butter chips.

  5. Bake for 25-30 min. or until toothpick inserted comes out with moist crumbs (it may be a bit wet, due to the chocolate chunks).

  6. Important! Let cool for 10 min. before slicing. It may seem a bit underdone, but that's what makes it ultra gooey and fudgy.
