Gluten-free & Vegan Snowball Cookies

Soft, pillowy mounds of heaven. A sweet almond, pecan cookie coated with powdered sugar. The ultimate, classic holiday cookie.

  • ½ cup vegan butter
  • ¼ cup powdered sugar
  • ½ cup gluten-free all-purpose flour
  • ½ cup almond flour
  • ½ cup finely chopped pecans
  • ¼ tsp almond extract
  • ½ cup powdered sugar


  1. Preheat the oven to 325 degrees. Line a baking sheet with parchment paper or a silicone baking mat.

  2. In a large bowl, cream together butter and sugar. Stir in flours, pecans, and almond extract until a soft dough forms. Taking 2 tbsp of dough at a time, roll into balls. Space evenly on baking sheet. Bake for 22 min.

  3. Carefully, while still warm, roll balls in powdered sugar. Transfer to a wire cooling rack (that is on top of a baking sheet).
