- ½ cup vegan butter
- ¼ cup powdered sugar
- ½ cup gluten-free all-purpose flour
- ½ cup almond flour
- ½ cup finely chopped pecans
- ¼ tsp almond extract
- ½ cup powdered sugar

Preheat the oven to 325 degrees. Line a baking sheet with parchment paper or a silicone baking mat.

In a large bowl, cream together butter and sugar. Stir in flours, pecans, and almond extract until a soft dough forms. Taking 2 tbsp of dough at a time, roll into balls. Space evenly on baking sheet. Bake for 22 min.

Carefully, while still warm, roll balls in powdered sugar. Transfer to a wire cooling rack (that is on top of a baking sheet).
