I’ve been on a ginger molasses kick lately, so I ditched the cookies today and opted for a fresh, warm loaf. Smother on some almond or peanut butter and I’ll be drooling.
So easy to make with simple ingredients. Perfect to bring to your holiday party or warm up on Christmas morning. Your choice 🙂

- 1 ½ cups unbleached, all-purpose flour
- ¼ cup whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- 2 tsp ginger
- ½ tsp cinnamon and nutmeg
- ¼ tsp allspice
- ¼ cup vegan butter
- ¼ cup cane sugar
- ¼ cup coconut sugar
- 2 tbsp molasses
- ½ cup applesauce
- 1 flax egg (1 tbsp flax seed meal + 2 tbsp water)
- ½ cup almond milk
- 1 tsp vanilla extract

Preheat the oven to 350 degrees. Line a loaf pan with parchment paper. Prepare flax egg by combining flax seed meal and water. Set aside.

In a large bowl, combine the flours, baking soda and powder, salt, and spices. In a separate bowl, beat the sugars and butter (with a hand or stand mixer). Add in the molasses, applesauce, flax egg, milk, and vanilla. Stir the wet mixture into the dry until smooth.

Pour the batter into the prepared loaf pan. Bake for 53-55 min. until a toothpick inserted comes out clean.
