15-Minute Cumin-Spiced Black Bean Tacos

Ingredients

  • 1 15 oz. can black beans
  • 1 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp ground coriander
  • 1 red bell pepper, thinly sliced
  • 1/4 white onion, thinly sliced
  • 1/4 head of green cabbage
  • Sliced Avocado
  • Fresh Cilantro
  • Trader Joes Green Goddess Dressing (or dressing of choice)
  • 5-6 corn tortillas

Instructions

  1. Rinse and drain black beans. Add to a small saucepan along with spices. Cook for 2-3 min. until heated through and slightly soft. Set aside. 

  2. In a small skillet, add a drizzle of oil or water. Add onion and saute for 1-2 min. until fragrant and translucent. Add bell pepper and a pinch of salt. Sauté for another minute until tender. Set aside. 

  3. Heat tortillas in microwave for 20 seconds until soft. 

  4. Assemble: Spoon some black beans on tortilla, followed by fajita veggies. Top with sliced avocado, fresh cilantro, and a drizzle of green goddess dressing.
