Sometimes all you’re craving is a simple, no-fuss, healthy meal. I have had my fair share of having no energy to want to cook dinner and having minimal ingredients in my kitchen. However, you don’t need to sacrific taste when cooking an easy and fast meal.
These cumin-spiced black bean tacos are packed with flavor, texture, and nutrients. Great kick of protein from the black beans, healthy fats from the avocado and dressing, and variety of vitamins and minerals from the vegetables, such as vitamin K, potassium, and fiber.
Black bean tacos are always my go-to when I am feeling lazy in the kitchen. Simply heat up some beans with some spices, saute your favorite vegetables, and top with a flavorful dressing!
My absolute favorite dressing right now is the Green Goddess Dressing from trader joes. It’s filled with simple, wholesome ingredients and is packed with flavor.

These cumin-spiced black bean tacos are packed with flavor, texture, and nutrients.
- 1 15 oz. can black beans
- 1 tsp ground cumin
- 1/4 tsp cayenne pepper
- 1/4 tsp garlic powder
- 1/4 tsp salt (or to taste)
- 1/4 tsp ground coriander
- 1 red bell pepper, thinly sliced
- 1/4 white onion, thinly sliced
- 1/4 head of green cabbage
- Sliced Avocado
- Fresh Cilantro
- Trader Joes Green Goddess Dressing (or dressing of choice)
- 5-6 corn tortillas

Rinse and drain black beans. Add to a small saucepan along with spices. Cook for 2-3 min. until heated through and slightly soft. Set aside.

In a small skillet, add a drizzle of oil or water. Add onion and saute for 1-2 min. until fragrant and translucent. Add bell pepper and a pinch of salt. Sauté for another minute until tender. Set aside.

Heat tortillas in microwave for 20 seconds until soft.

Assemble: Spoon some black beans on tortilla, followed by fajita veggies. Top with sliced avocado, fresh cilantro, and a drizzle of green goddess dressing.
