
Creamy and perfectly sweetened - these blueberry baked oats are topped with a delicious streusel that's reminiscent of blueberry buckle.
Preheat the oven to 350°F. In a 5-inch ramekin, combine the oats, lemon zest, baking powder, cinnamon and salt. Stir to combine.
Start by making the streusel. In a small bowl, combine all the streusel ingredients until it forms a consistency similar to wet sand.
Stir in mashed banana, milk, maple syrup, and vanilla extract until creamy. Fold in the blueberries. Top the oats with the streusel.
Bake for 25 minutes or until golden brown and oatmeal is set. Let cool for 5 minutes before serving.
