Ingredients

Streusel Topping

  • 1 tbsp old-fashioned rolled oats
  • 1 tbsp melted vegan butter
  • 2 tsp maple syrup
  • ¼ cup all-purpose flour

Blueberry Baked Oatmeal

  • ½ cup old-fashioned rolled oats
  • ½ tsp lemon zest
  • ¼ tsp baking powder
  • ¼ tsp ground cinnamon
  • Pinch of salt
  • ½ banana, mashed
  • ½ cup non-dairy milk
  • 1 tbsp maple syrup
  • ¼ tsp vanilla extract
  • Small handful fresh or frozen (not thawed) blueberries

Instructions

  1. Preheat the oven to 350°F. In a 5-inch ramekin, combine the oats, lemon zest, baking powder, cinnamon and salt. Stir to combine.

  2. Start by making the streusel. In a small bowl, combine all the streusel ingredients until it forms a consistency similar to wet sand.

  3. Stir in mashed banana, milk, maple syrup, and vanilla extract until creamy. Fold in the blueberries. Top the oats with the streusel.

  4. Bake for 25 minutes or until golden brown and oatmeal is set. Let cool for 5 minutes before serving.
