Chocolate Chip, Hazelnut, & Tahini Granola Bars

Crunchy, chewy, & delicious homemade granola bars filled with hazelnuts, tahini, and studded with chocolate chips.

Ingredients

  • 2 ½ cups (248g) old-fashioned rolled oats
  • ½ cup (87g) chopped hazelnuts
  • ¼ cup (24g) sesame seeds
  • ¼ cup (77g) maple syrup
  • ¼ cup vegan butter
  • ¼ cup (69g) packed brown sugar
  • ¼ cup (64g) tahini
  • ¼ cup (64g) creamy natural peanut butter
  • 1 tsp vanilla extract
  • ¼ tsp almond extract (optional, but recommended)
  • ½ tsp kosher salt
  • cup chocolate chips

Instructions

  1. Preheat the oven to 350F. Line a 9x9 baking dish with parchment paper. 

  2. Evenly spread oats and hazelnuts on to a small baking sheet. Toast in the oven for 8 minutes. Stir in sesame seeds and toast for an additional 2 minutes until golden brown.

  3. Over medium-heat in a large saucepan, add maple syrup, butter, and brown sugar. Once butter has melted whisk the ingredients together and remove from heat. Stir in tahini, peanut butter, and extracts. 

  4. Add oats, sesame seeds, hazelnuts, and salt to the saucepan and stir well to combine. Make sure oats are fully saturated with wet mixture. Press mixture into prepared baking dish. Distribute the chocolate chips on top, pressing into the dough so they stick. Sprinkle over flaky salt. 

  5. Refrigerate for 2 hours. Cut into 8 equal-sized bars. Enjoy! Store in refrigerator for up to 1 ½ weeks.
