Making homemade granola bars are so much more delicious than store bought. Sure, it’s a lot easier to purchase them from the store but when making them from home, you know exactly what’s in the bars, how it’s made, and it tastes 10x better (in my opinion :)).

These homemade granola bars contain oats, hazelnuts, sesame seeds, maple syrup, vegan butter, brown sugar, tahini, peanut butter, vanilla and almond extract, kosher salt, and chocolate chips.

How to make Chocolate Chip, Hazelnut, & Tahini Granola Bars:

  1. Preheat the oven to 350F. Line a 9×9 baking dish with parchment paper. 
  2. Evenly spread oats and hazelnuts on to a small baking sheet. Toast in the oven for 8 minutes. Stir in sesame seeds and toast for an additional 2 minutes until golden brown.
  3. Over medium-heat in a large saucepan, add maple syrup, butter, and brown sugar. Once butter has melted whisk the ingredients together and remove from heat. Stir in tahini, peanut butter, and extracts. 
  4. Add oats, sesame seeds, hazelnuts, and salt to the saucepan and stir well to combine. Make sure oats are fully saturated with wet mixture. Press mixture into prepared baking dish. Distribute the chocolate chips on top, pressing into the dough so they stick. Sprinkle over flaky salt. 
  5. Refrigerate for 2 hours. Cut into 8 equal-sized bars. Enjoy! Store in refrigerator for up to 1 ½ weeks.

Can I substitute with another nut butter?

Definitely! You could even do 1/2 cup just tahini or 1/2 cup just peanut butter instead of both. Almond butter or sunflower seed butter will also work great.

Can I use another nut instead of hazelnuts?

You can substitute the hazelnuts with any other nut, such as almonds, cashews, walnuts, or pecans.

Why are my granola bars falling apart?

These granola bars are a bit more fragile, but it’s really crucial to let them firm up in the fridge for at least 2 hours. The granola bars are best when cold and tend to soften when left at room temperature for over 30 minutes.

Ingredients
  • 2 ½ cups (248g) old-fashioned rolled oats
  • ½ cup (87g) chopped hazelnuts
  • ¼ cup (24g) sesame seeds
  • ¼ cup (77g) maple syrup
  • ¼ cup vegan butter
  • ¼ cup (69g) packed brown sugar
  • ¼ cup (64g) tahini
  • ¼ cup (64g) creamy natural peanut butter
  • 1 tsp vanilla extract
  • ¼ tsp almond extract (optional, but recommended)
  • ½ tsp kosher salt
