
Soft and fluffy cinnamon rolls that packed 5 g protein per roll.
Add cottage cheese to a food processor and process until just blended. The texture should be smooth with several small chunks remaining, similar to the texture of greek yogurt.
In a large mixing bowl, whisk together flour, baking powder, and salt. Add blended cottage cheese, yogurt, milk, maple syrup, and vanilla. Stir well with a spoon until a soft dough forms. Form into a smooth ball.
Add dough to a floured surface. Roll into a ~¼" rectangle. Combine the cinnamon and sugar in a bowl. Spread softened butter over the entire rectangle. Sprinkle over cinnamon sugar mixture.
Roll up the dough starting from the longer side into a long log. Cut the dough into 8-10 even-sized slices.
Preheat air fryer to 350°F. Coat the basket with non-stick cooking spray. Place rolls in the air fryer, trying not to overcrowd the basket. Spray with non-stick cooking spray. Air fry for 7-8 minutes until fluffy and golden brown.
Whisk together icing ingredients until creamy. Top on warm cinnamon rolls and enjoy.
