I have not tested a gluten-free version of this recipe, but a gluten-free 1-1 all-purpose flour may work.

Healthier High Protein Cinnamon Rolls

Ingredients

  • ½ cup cottage cheese (2% or 4%)
  • 1 ¼ cup all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ cup non-fat greek yogurt
  • 2 tbsp milk
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract

Filling

  • ¼ cup brown or coconut sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp unsalted butter, softened

Icing

  • ½ cup powdered sugar
  • 2-3 tsp milk
  • ½ tsp vanilla extract

Instructions

  • Add cottage cheese to a food processor and process until just blended. The texture should be smooth with several small chunks remaining, similar to the texture of greek yogurt.
  • In a large mixing bowl, whisk together flour, baking powder, and salt. Add blended cottage cheese, yogurt, milk, maple syrup, and vanilla. Stir well with a spoon until a soft dough forms. Form into a smooth ball.
  • Add dough to a floured surface. Roll into a ~¼" rectangle. Combine the cinnamon and sugar in a bowl. Spread softened butter over the entire rectangle. Sprinkle over cinnamon sugar mixture.
  • Roll up the dough starting from the longer side into a long log. Cut the dough into 8-10 even-sized slices.
  • Preheat air fryer to 350°F. Coat the basket with non-stick cooking spray. Place rolls in the air fryer, trying not to overcrowd the basket. Spray with non-stick cooking spray. Air fry for 7-8 minutes until fluffy and golden brown.
  • Whisk together icing ingredients until creamy. Top on warm cinnamon rolls and enjoy.
