Healthy Chai-spiced Pancakes

These fluffy chai-spiced pancakes are completely gluten-free and vegan. Also freezer-friendly!

Ingredients

  • 2 cups almond flour
  • ½ cup oat flour
  • ¼ cup rolled oats
  • 2 tbsp tapioca flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp each: cardamom, allspice, nutmeg, ginger, cinnamon, cloves
  • 1 cup non-dairy milk
  • ¼ cup applesauce
  • 1 tsp vanilla extract.

Instructions

  1. Whisk together all ingredients in a large bowl until smooth. Heat a dab of vegan butter or coconut oil in a large skillet over medium heat. Add ¼ cup batter at a time. Cook for 1 min. on both sides until golden brown.

  2. (Optional): Serve with maple syrup, sliced bananas, and peanut butter. Enjoy!
