To be honest, I’ve always been a morning person. I think one of the biggest things that pushes me to wake up so early is the thought of a delicious, satisfying breakfast. Most days, that looks like a warm bowl of oats. However, it is a bit harder for me to wake up on the weekends, but if I know I am going to make a fluffy stack of pancakes…well, getting out of bed is a lot easier than you think.

In my opinion, you can never have too many pancake recipes. This time of year I am looking for all things comforting. From warm bowls of soup, to comforting plates of pasta. The thought of chai lattes comes to mind, so what better way than to stick all those amazing chai spices in a pancake. Drizzle with maple syrup and smother with peanut butter…you drooling? I know I am.

These fluffy chai-spiced pancakes are completely gluten-free and vegan. Also freezer-friendly!
- 2 cups almond flour
- ½ cup oat flour
- ¼ cup rolled oats
- 2 tbsp tapioca flour
- 2 tsp baking powder
- ¼ tsp salt
- ¼ tsp each: cardamom, allspice, nutmeg, ginger, cinnamon, cloves
- 1 cup non-dairy milk
- ¼ cup applesauce
- 1 tsp vanilla extract.

Whisk together all ingredients in a large bowl until smooth. Heat a dab of vegan butter or coconut oil in a large skillet over medium heat. Add ¼ cup batter at a time. Cook for 1 min. on both sides until golden brown.
