These brownies are so incredibly easy and feature healthier alternatives to the traditional ingredients found in brownies. Now that doesn’t mean you can’t indulge in regular brownies, because let’s be real those are OG.

But….not gonna lie I think these taste much better.

Instead of regular cane sugar, coconut sugar and maple syrup are used. To keep these gluten-free, I opted for almond flour instead of wheat flour. These are also (of course) completely vegan, with the help of coconut oil and almond butter to bind it.

Healthier Fudgy Almond Butter Caramel Brownies

Ingredients
  • ½ cup almond flour
  • ½ cup cocoa powder
  • 1 tbsp instant espresso powder
  • 2 tsp baking powder
  • ½ tsp sea salt
  • ½ cup creamy almond butter
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • ¼ cup coconut sugar
  • cup chopped walnuts
  • cup dark chocolate chunks
Almond Butter Caramel
  • ¼ cup maple syrup
  • ¼ cup coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp almond butter
  • 1 tsp tapioca or arrowroot starch
Instructions
  1. Preheat the oven to 350 degrees. Line an 8×8 baking dish with parchment paper.

  2. In a large bowl, combine flour, cocoa powder, espresso, baking powder, and salt. In a separate bowl, whisk together almond butter, coconut oil, vanilla, maple syrup, and coconut sugar. Pour wet mixture into dry. Combine with a spatula or wooden spoon. Fold in walnuts and chocolate chunks. The batter should be on the thicker side.

  3. Evenly spread the batter into half of the baking dish. Top with more chocolate chunks if desired. Bake for 20 min. Let cool for 8 min. before slicing.

Caramel
  1. Combine all ingredients in a small saucepan over medium-low heat. Bring to a low simmer. Simmer for 3 min. until thickened and slightly reduced. Drizzle over brownies when ready to serve. Sprinkle over a bit of sea salt.
