
Perfectly fluffy, and moist blondies studded with soft chunks of apple, rich notes of peanut butter, and drizzled in a creamy coconut-based caramel.
Preheat oven to 350°F degrees. Line an 8x8" baking dish with parchment paper. Prepare flax egg by combining 1 tablespoon of flaxseed with 2 tablespoons of water. Set aside for 5 minutes to thicken.
In a large mixing bowl using a handheld mixer on medium speed, cream together sugar, peanut butter, and vegan butter until light and fluffy. Mix in flax egg, vegetable oil, milk, and vanilla. Add flour, cinnamon, baking powder and soda, and salt. Mix on low speed until a smooth batter forms. Fold in apple and pecans. Pour batter into prepared pan.
Bake for 23-25 minutes, until the edges are just starting to brown and toothpick inserted comes out clean.
While blondies are baking, prepare the caramel sauce. In a small saucepan, add coconut milk and brown sugar. Whisk until combined. Bring mixture to a low boil, then reduce to simmer for 8-10 minutes until thickened and sauce coats the back of a spoon. Take off heat and stir in flaky sea salt.
Remove blondies from oven. Let cool for 10 minutes. Place a wire cooling rack over a large baking sheet. Carefully transfer blondies to wire cooling rack. While blondies are still warm, pierce the top all over with a fork. Pour caramel over blondies. Slice and enjoy!
