Ingredients

  • ½ cup oat milk (or sub other non-dairy milk)
  • 2 tbsp chia seeds
  • 1 tsp powdered peanut butter
  • 1 tsp cocoa powder
  • 1 tsp maple syrup
  • ½ tsp vanilla extract

Optional Toppings

  • 1 tsp creamy peanut butter
  • Sliced banana
  • Chopped dark chocolate

Instructions

  1. In a small glass jar or container (with a lid), whisk together oat milk, chia seeds, powdered peanut butter, cocoa powder, maple syrup, and vanilla extract. Seal the jar and refrigerate for overnight or at least 2 hours.

  2. Top pudding with ingredients of choice, such as peanut butter, sliced banana, and chopped chocolate or cacao nibs.

Recipe Notes

*I like using oat milk the best in this recipe. It's the creamiest and richest non-dairy milk and adds a nice flavor and mouthfeel to this chia pudding.

*If you don't have access to powdered peanut butter you could also substitute with regular, natural peanut butter.
