
Soft and chewy dark chocolate chunk banana bread cookies made for one.
In a bowl, whisk together mashed banana, melted butter, sugars, and vanilla until creamy. Mix in flour, corn starch, baking soda, salt, and cinnamon. Fold in chopped chocolate and banana chips. Cover and refrigerate for 20 minutes.
Preheat the oven to 350°F. Line a baking sheet with parchment paper. Form one large cookie and place on baking sheet. Top with additional chocolate chunks and banana chips.
Bake for 10-12 minutes until edges are crisp, and middle is still a bit soft. Allow cookie to cool on baking sheet for 5 minutes before transferring to a wire cooling rack. Finish with flaky sea salt and enjoy!
