Single-Serving Dark Chocolate Chunk Banana Bread Cookies

Ingredients

  • 1 tbsp mashed ripe banana
  • 1 tbsp vegan butter, melted
  • 1 tbsp packed dark brown sugar
  • 1 ½ tsp granulated sugar
  • ¼ tsp vanilla extract
  • 2 tbsp + 2 tsp all-purpose flour
  • ¼ tsp cornstarch
  • â…› tsp baking soda
  • â…› tsp salt
  • â…› tsp ground cinnamon
  • 1 tbsp chopped dark chocolate + more for topping
  • 2 tsp chopped dried banana chips + more for topping

Instructions

  • In a bowl, whisk together mashed banana, melted butter, sugars, and vanilla until creamy. Mix in flour, corn starch, baking soda, salt, and cinnamon. Fold in chopped chocolate and banana chips. Cover and refrigerate for 20 minutes. 
  • Preheat the oven to 350°F. Line a baking sheet with parchment paper. Form one large cookie and place on baking sheet. Top with additional chocolate chunks and banana chips. 
  • Bake for 10-12 minutes until edges are crisp, and middle is still a bit soft. Allow cookie to cool on baking sheet for 5 minutes before transferring to a wire cooling rack. Finish with flaky sea salt and enjoy!
