Peach Crisp Protein Oatmeal
Creamy protein oats topped with caramelized peaches and crunchy granola.
Servings 1 serving
Ingredients
Peaches
- 1 large peach, sliced
- 1 tbsp water
- 2 tsp maple syrup
- 1 tsp ground cinnamon
- 1 tsp cornstarch
- ½ tsp vanilla extract
Protein Oatmeal
- ½ cup old-fashioned rolled oats
- 1 scoop (30g) vanilla protein powder
- ½ tsp ground cinnamon
- Pinch of ground nutmeg
- For topping: granola, nut butter, flaky sea salt, cinnamon
Instructions
- Start by cooking the peaches. Add all peach ingredients to a medium skillet over medium-high heat. Stir well to combine. Cook for 5-6 minutes until peaches have softened. Set aside.
- Combine oats and 1 cup water in a large bowl (to prevent overflowing) and microwave for 5 minutes. Meanwhile, combine protein powder with water until a pourable consistency forms (similarly to runny peanut butter).
- Mix ‘whey drip’ and spices into warm oats and pour into serving bowl. Top oats with peaches, granola, nut butter, flaky sea salt, and cinnamon.
