Caramelized Peach Baked Oatmeal
Creamy baked oatmeal topped with caramelized peaches.
Servings 9 servings
Ingredients
- 1 ¾ cups milk
- ½ cup plain greek yogurt
- 2 large eggs
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 2 ½ cups old-fashioned rolled oats
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ½ tsp baking powder
- ¼ tsp salt
- 3 tbsp brown sugar
- 2 peaches, thinly sliced
Instructions
- Preheat oven to 350°F. Grease a 8×8" square baking pan with non-stick cooking spray.
- In a large mixing bowl, whisk together milk, yogurt, eggs, maple syrup, and vanilla. Stir in oatmeal, spices, baking powder, and salt.Â
- Pour oatmeal into prepared baking dish. Sprinkle over brown sugar then arrange sliced peaches on top of brown sugar.
- Bake oatmeal for 30-35 minutes until set and edges start to pull away from the sides. Allow the baked oatmeal to cool for 20 minutes then slice and serve.
- Serve with drizzle of maple syrup and flaky sea salt.Â
