Yes! Substitute milk with non-dairy milk, greek yogurt with non-dairy yogurt, and eggs with 1/2 cup applesauce or 1/2 cup mashed banana.

Caramelized Peach Baked Oatmeal

Ingredients

  • 1 ¾ cups milk
  • ½ cup plain greek yogurt
  • 2 large eggs
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 ½ cups old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp baking powder
  • ¼ tsp salt
  • 3 tbsp brown sugar
  • 2 peaches, thinly sliced

Instructions

  • Preheat oven to 350°F. Grease a 8×8" square baking pan with non-stick cooking spray.
  • In a large mixing bowl, whisk together milk, yogurt, eggs, maple syrup, and vanilla. Stir in oatmeal, spices, baking powder, and salt. 
  • Pour oatmeal into prepared baking dish. Sprinkle over brown sugar then arrange sliced peaches on top of brown sugar.
  • Bake oatmeal for 30-35 minutes until set and edges start to pull away from the sides. Allow the baked oatmeal to cool for 20 minutes then slice and serve.
  • Serve with drizzle of maple syrup and flaky sea salt.
