20-Minute Peanut Beef Bowl

This 20-Minute Peanut Beef Bowl is the perfect healthy, high-protein meal prep recipe consisting of ground beef and veggies tossed in a flavorful Asian-inspired peanut sauce.

This 20-Minute Peanut Beef Bowl recipe has been a staple in my household for years. I seriously make it at 3-4x/month. It’s absolutely delicious and incredibly easy to make! Plus, doesn’t require many ingredients and can be easily customizable.

Simple and easy to make. This recipe is easy to make and contains simple easy-to-find ingredients.

Flavor-packed. The peanut sauce in this recipe is absolutely addicting. It contains a mix of peanut butter, soy sauce, oyster sauce, lime juice, rice vinegar, sesame oil, and brown sugar.

Nutritious and high in protein. This recipe is high in protein from the ground beef and great source of fiber from the veggies and rice base.

Ingredient Breakdown:

  • Peanut butter – any peanut butter works, but I recommend creamy unsalted peanut butter.
  • Dark soy sauce – I use dark soy sauce for the color, but you can use regular or tamari.
  • Lime juice – adds a delicious zesty flavor.
  • Oyster sauce – this is highly recommended and will taste different without.
  • Rice vinegar – can sub with more lime juice, but really helps balance the flavor!
  • Sesame oil – adds a delicious nutty flavor.
  • Brown sugar – can substitute with maple syrup or honey.
  • Ground beef – can use any %, but I used lean for extra protein.
  • Bell peppers – this is my favorite veggie to use in this recipe, but any vegetable works great.
  • Fresh ginger and garlic – adds SO much flavor. Highly recommend using fresh.

How to make 20-Minute Peanut Beef Bowl:

  1. Whisk together all sauce ingredients until creamy. Set aside.
  2. Heat 1 tbsp oil in a large skillet over medium-high heat. Brown beef, breaking it into small pieces, until it is browned and cooked through, about 5-6 minutes. Add to a bowl, leaving remaining fat in the skillet.
  3. Heat skillet back up over medium-high and add in veggies. Cook until tender and transfer to a bowl.
  4. Add remaining tbsp of oil to the skillet. Cook ginger and garlic for 1-2 minutes until fragrant, stirring constantly to prevent burning. Pour in sauce. Bring to a low boil then add in cooked beef and veggies. Stir well to fully coat.
  5. Serve beef and veggies over cooked rice. Garnish with green onion and sesame seeds. Enjoy!

Recipe Modifications:

Substitute dark soy sauce with regular soy sauce or tamari.

Substitute brown sugar with maple syrup or honey.

Substitute ground beef with ground chicken or turkey or vegan ground meat.

Substitute bell peppers with veggies of choice.

Storage Instructions:

Store cooled ground beef and veggies in an airtight container in the fridge for up to 3-4 days.

Ingredients

Peanut Sauce

  • 2 ½ tbsp creamy unsalted peanut butter
  • 2 tbsp dark soy sauce
  • 2 tbsp lime juice
  • 1 tbsp oyster sauce
  • 2 tsp rice vinegar
  • 2 tsp sesame oil
  • 1 tsp brown sugar

Bowl Ingredients

  • 2 tbsp neutral-flavored oil, divided
  • 1 lb ground beef
  • 2 bell peppers, sliced
  • 2 garlic cloves, minced
  • 1-inch piece ginger, peeled and grated
  • Cooked rice (white or brown)
  • Sliced green onion
  • Sesame seeds

Instructions

  • Whisk together all sauce ingredients until creamy. Set aside.
