Dark Chocolate Pistachio Baked Oatmeal

Dubai chocolate meets baked oatmeal in this decadent dark chocolate pistachio baked oats.

Ingredients

  • ½ cup greek yogurt
  • 2 large eggs
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups milk
  • 2 ½ cups old-fashioned rolled oats
  • 2 scoops (50g) chocolate protein powder
  • 3 tbsp dutch-processed cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • â…“ cup chopped pistachios
  • 1-2 tbsp pistachio butter
  • (Optional): chocolate chips, for topping

Instructions

  • Preheat oven to 350°F. Grease a 8×8" baking pan.
  • In a large mixing bowl, whisk together yogurt, eggs, maple syrup, and vanilla until combined. Whisk in milk. Mix in oats, protein powder cocoa powder, baking powder, and salt. Fold in pistachios.
  • Pour mixture into prepared baking pan. Drizzle over pistachio butter and sprinkle on chocolate chips. Bake for 30-35 minutes until set.
  • (Optional): serve with another drizzle of pistachio butter and flaky sea salt.
