- 1 ¼ cup unbleached, all-purpose flour
- 1 cup rolled oats
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ tsp cinnamon
- ¼ tsp ground nutmeg
- ¾ cup cane sugar
- ¼ cup light brown sugar
- ¾ cup melted coconut oil
- 1 flax egg (1 tbsp flax seed meal + 2 tbsp water)
- 1 tsp vanilla extract
- 3 tbsp non-dairy milk
- 1 cup chopped apples such as honeycrisp
- ¼ cup finely chopped pecans

Preheat the oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper. Prepare flax egg by mixing flax seed meal + water in a small bowl. Set aside.

In a large bowl, whisk together flour, oats, baking soda and powder, salt, and spices. In a separate bowl, combine melted coconut oil, sugars, flax egg, vanilla, and milk. Pour wet mixture into dry. Using a wooden spoon or spatula, combine until a soft cookie dough forms. Fold in chopped apples and pecans. Use a cookie scoop to scoop dough onto the baking sheet. Slightly press down with the palm of your hand.

Bake for 14-15 min. until light golden brown. Let cool for 3 min. before enjoying!
