This creamy baked oatmeal has a spice filled oatmeal base with soft chunks of stewed cinnamon apples. It’s filled with simple ingredients and requires minimal prep!

Ingredient Breakdown:

  • Apples – any apple variety will work. My favorites to use are honeycrisp, fuji, or pink lady.
  • Maple syrup – can also substitute with honey or more brown sugar.
  • Brown sugar – can substitute with more maple syrup or honey.
  • Non-dairy milk – can substitute with regular milk.
  • Applesauce – any unsweetened applesauce will do!
  • Old-fashioned rolled oats – I recommend old-fashioned rolled oats over quick oats in this recipe.
  • Cinnamon, nutmeg, allspice – you can also use a pre-mixed apple pie spice if you prefer.
  • Pecans – can substitute with walnuts or omit.

How to make Apple Pie Baked Oatmeal:

  1. Combine all stewed apple ingredients together in a large skillet over medium-high heat, stirring well to completely coat apples.
  2. Bring to a simmer and reduce heat to medium low. Cook for 10-15 minutes until apples are soft. Set aside.
  3. Preheat oven to 350F. Grease an 8×8” baking dish with non-stick cooking spray.
  4. In a large mixing bowl, whisk together non-dairy milk, applesauce, maple syrup, and vanilla until thoroughly combined. Add oats, spices, baking powder, and salt. Use a wooden spoon or spatula to combine until incorporated. Fold in pecans and ½ of the stewed apples. Pour mixture into the prepared baking dish and spread to evenly distribute. Top with half of the remaining stewed apples.
  5. Bake for 28-30 minutes until top is golden brown and oatmeal is firm and no longer jiggles.
  6. Serve oatmeal topped with remaining stewed apples and optional, drizzle of maple syrup. Enjoy!

Storage Instructions:

Ingredients

Stewed Apples

  • 3 apples, peeled, cored, and thinly sliced
  • ½ cup water
  • 2 tbsp maple syrup
  • 1 tbsp brown sugar
  • 1 ½ tsp ground cinnamon
  • ½ tbsp cornstarch
  • ½ tsp vanilla extract
  • Pinch of flaky sea salt

Oatmeal

  • 2 cups unsweetened, plain non-dairy milk
  • ½ cup unsweetened applesauce
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 ½ cups old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground allspice
  • ½ tsp baking powder
  • ¼ tsp kosher salt
  • ¾ cup chopped pecans
  • ¾ stewed apples

Instructions

  • Combine all stewed apple ingredients together in a large skillet over medium-high heat, stirring well to completely coat apples.
