How to Make PB & J Baked Oatmeal:
- Preheat the oven to 350°F. Line an 8″ square baking dish with parchment paper.
- In a large mixing bowl, whisk together the mashed banana, peanut butter, and vanilla until creamy. Pour in milk and whisk well until fully combined. Fold in the oats, baking powder and salt with a rubber spatula or wooden spoon. Pour oatmeal into the prepared baking dish. Bake for 20-25 minutes until set.
- While the oatmeal is baking, prepare the compote. In a medium saucepan, combine the cherries, sugar, and lemon zest. Cook over medium-heat for 10-15 minutes until cherries have broken down quite a bit, softened, and are jam-like in consistency. You can use the back of a wooden spoon to mash the cherries a bit. Once done, transfer to a small bowl and set aside until ready to serve.
- Serve the baked oatmeal with a drizzle of peanut butter and dollop of cherry compote.
